Modern wheat is typically a highly modified, six-chromosome grain (hexaploid) optimised for industrial consistency. This also forces farmers to use more pesticides as the kernels are not as compact and cannot naturally protect itself against rot and pests. Our time-honoured seeds have not been aggressively modified, preserving their natural structure and balance.The result is flour that is often gentler to digest and closer to the grain our ancestors thrived on, offering a more wholesome connection to our baking heritage and to the earth itself.
